From asparagus season in London to fine-dining in Paris

45 Jermyn Street Ever championing the finest seasonal ingredients, one of my favourite London haunts has introduced five new asparagus dishes served from breakfast through to dinner, with the stems directly sourced from a family-run farm in Herefordshire. I particularly enjoyed the Asian-influenced braised chicken legs cooked in an umami-rich soy dashi sauce, and combined with white and green asparagus spheres, shimeji mushrooms and topped with a quail’s egg. For pasta lovers, homemade tagliolini is paired with thinly sliced asparagus and morel mushrooms, cooked together in a mushroom stock and finished with Italian Caciocavallo cheese.
